Kimble's Cookbook: Old Fashioned Peach Cobbler

Here at Kimble's there are many things that we enjoy, one of these being cooking delicious food for our customers. We felt like it wouldn't be right to keep all of this goodness to ourselves. In 2018, the Kimble's crew teamed up with the United Way of West Georgia, Inc. to publish "Cooking With Kimble's Food By Design: Good People Sharing Good Food!" This was a way for us to begin sharing some of our best recipes with one another, and now we want to share with you! Kimble’s is starting a Kimble’s Cookbook series where we let you guys in on some of our most delicious secrets. We hope you enjoy Kimble’s Cookbook as much as we do!



Old Fashioned Peach Cobbler Recipe


Filling:

8-9 fresh peaches, peeled and sliced

½ cup water

1 ½ cup sugar

2 TBSP self-rising flour

Pinch of salt

½ cup butter, melted


Pastry for Cobbler:

1 cup self-rising flour

½ tsp salt

⅓ cup shortening

4 TBSP sweet milk or enough to make the dough stiff


Filling: Cook peaches in water until tender. Mix flour, salt and sugar. Add to the peaches, mix. Add melted butter.


Pastry: Blend flour, salt, and shortening to coarse meal texture. Add milk. Roll on a floured surface. Pour half of the peaches in a 9 x 13 inch pan. Cut some dumplings and push them in the peach juice. Pour remaining peaches in and top with lattice straps. Bake in a 350 degree oven for 35-40 minutes or until the top is golden brown. Sprinkle a little sugar on top before baking (optional). This should be a juicy cobbler, not dry.
